Using a Smoker: Quick and Easy Tips

One of the common misconceptions surrounding smokers is that they require the owner to be a professional gourmet chef. Nothing could be further from the truth. The fact of the matter is, smokers are simple to use and even the beginner can expect excellent results by following a few simple rules.

  • Try not to lift the lid of the smoker unless absolutely necessary. Lifting the lid frequently will drastically increase cooking time. The beauty of the smoker is that once you get the temperature set, all you have to do is put on the food, sit back and relax.
  • If using a charcoal unit, start your fire using a charcoal chimney and fire starter rather than lighter fluid. Smoking purists never use fluid!
  • When smoking with a vertical smoker in extremely cold weather, take a large cardboard box and place it over the smoker to help retain the heat.
  • Also, when using a vertical smoker, make sure the water pan never goes dry. If you hear a sizzling, add water (or whatever liquid you like).
  • Don't disturb the fire (poking etc.) while food is on the grill and the lid is closed or else the food will become covered with a layer of ash.
  • Smoking times vary according to weather conditions, size or cut of meat and desired doneness. Always use a meat thermometer.
  • Many people over-smoke their food. The smoker does NOT need to be billowing thick smoke out of it. Over-smoked food tastes bitter and has a sooty look to it. Wait an hour or so after putting the food on the smoker before adding wood chunks or chips. Use wood sparingly (see our wood chart)
  • Experiment with the varieties of wood that Sobie's carries- each imparts a different flavour to the food. Wood chunks last longer than chips, both should be soaked a minimum of one hour before use.
  • Get creative with flavourful additions in the water pan. Apple juice, orange juice, reserved marinades, herbs, spices, wine and beer all work very well.
