Hot Tips > Smoke With A Regular Gas or Charcoal Grill
If
you want to experiment with real smoke flavour, without investing
in a smoker, try using the following:
1.
Cast Iron Smoker Box
2. A couple handfuls of (presoaked) wood
- Pre-soak the wood 2 hours to overnight, in water (wine or beer for the gourmet).
- Place 2 handfuls of pre-soaked wood chips in a cast iron smoker box.
- Place the box on top of the rocks/charcoal/bars in you gas or charcoal grill.
- As the barbecue heats up, the chips will begin to smolder.
- Place food on the cooking grill, and with lid closed, cook and refill wood as necessary (the more wood, the stronger the smokey flavour).
